So, I roasted that tilapia in a shallow bath of white wine and lemon juice; also in the pan were a whole jalapeno, some little potatoes, chunks of sweet onion, a few briny black olives. A largeish cherry tomato, quartered, for good measure. The jalapeno became sweet and subtle and the fish was flaky and mild and the potatoes with the olives! It was great. I ate some salt water taffy and felt pretty good about the coming week.
